Tuna Sammy Spin

DSC_0159

I must admit, I've had a very lazy weekend and it was just the way I liked it. Did things around the apartment, took my bike around on errands, and topped the days off by making something delicious. Tonight for dinner I made Ina Garten's Grilled Tuna Rolls, with my own little spin. I followed the recipe, choosing to sear the tuna in a skillet, but added to the dressing 1/4 cup of diced cucumber and 2 tablespoons of rice wine vinegar. I love cucumber so I'm always thinking of ways to add it to things. I also used a sourdough roll that I toasted a little instead of a hot dog bun. It turned out so delicious! The dressing gives it a very crisp and light taste. Refreshing from the wasabi, cucumber, and lime yet comforting with the tuna and sourdough. Definitely something I'll make again.

What do you do with tuna? Please send your suggestions along! I have quite a hefty stock and am always looking for recipes. :)
